Spaghetti with Broccoli Rabe and Sausage

This is a really tasty and quick dinner - I think the whole thing took 20-30 minutes from start to finish. And it has healthy greens in it!



1/2 lb. Italian sausage, hot or sweet (pork, turkey, or chicken)
1 bunch broccoli rabe
about 3 Tbl. plain bread crumbs
crushed red pepper (optional)
8 oz. spaghetti
parmesan, for garnish

Heat a medium skillet over medium heat. Slice the sausage casing open lengthwise and break the sausage into small pieces. Cook until no longer pink.

Bring two pots of water to boil - one for the broccoli rabe, one for the spaghetti. Cut the ends off the broccoli rabe, and cook in boiling water for 4-5 minutes. Strain, get excess water out, and add to the skillet once the sausage is beginning to brown.



Add bread crumbs to the skillet, and add crushed red pepper if you are using sweet sausage. Or even if you're using hot sausage and just want more heat. Serve over spaghetti and garnish with parmesan.
