Pancakes

I decided I should make a real Sunday morning breakfast this morning - blueberry pancakes and bacon. This is my dad's recipe for pancakes (and waffles). Forget the Bisquick, these pancakes are super easy to make from scratch. And doesn't it feel so good to say "I made it from scratch"?



1 cup unbleached all-purpose flour
1 cup milk
1 Tbl baking powder
1 Tbl melted butter
1 egg
1 pinch salt
blueberries (optional)

Heat a large skillet over medium heat, and melt about 1/2 Tbl butter. Combine all ingredients in a mixing bowl, and pour batter in amounts of about 1/4 cup into skillet. Flip when bubbles start to form and pop on the top of the pancake.

This recipe is really easy to memorize, because the measurements kind of match up:

1 cup: flour, milk
1 Tbl: baking powder, butter
1 egg, pinch salt
